what i eat in a day (vegan)

hey guys welcome back to my blog! in today’s post i’m going to be sharing a what i eat in a day. i love these posts to give some super easy recipe inspiration and meal ideas. also everything is vegan but it’s really all so good!

before breakfast i start off by drinking a big glass of water and taking my vitamins. i take the trader joe’s women’s multi and probiotic vitamin which is packed with everything i could need. as for breakfast i made a smoothie bowl. normally i would put fruit on top and make it all cute but i has just gotten back from our cabin and we had zero fruit. here’s how to make the bowl…

blend:

  • frozen pineapple
  • banana
  • almond milk
  • frozen strawberries
  • frozen raspberries

this isn’t exactly food but i thought i would include my workout. for today’s workout i went for a small run. i actually used to do cross country forever ago and i’ve been getting back into it a little bit. i go to a track that has a trail in the back and run the trail. i just run for however long i feel like and today i wasn’t feeling a longer one. after my workout i went to the drugstore and picked up starbucks. i got a vanilla latte with soy milk because for some reason i’ve been really into hot drinks lately even though it’s summer.

for lunch i made a salad with a veggie burger crumbled on the top. this looks ugly but i promise it was good. i first made a simple salad base with just lettuce and tomato. for the veggie burger i used this vegan one from costco which are so good. then i just kinda broke it up and put it on top of the salad. with lunch i made a cup of green tea with lemon.

between lunch and dinner i cannot survive without a snack so i cut up an apple and added a scoop of peanut butter. this is such a good combo and super super easy snack. i also had some pita bread because that’s just really good.

lastly for dinner my mom made veggie fajitas. these were literally so good and i seriously recommend them. i got a tortilla and filled it with refried black beans, fried peppers, mushrooms, onion and topped with cilantro. i can’t hype up this dinner enough, it was so good. also i had two of these. a little later i made a cup of coffee. i know that’s so weird and i’m not recommending this at all because it will probably keep you up but i had to add it cause it was something i ate.
