more of my favorite easy meals

hi welcome back to my blog! lately i’ve been loving cooking and trying out new meal ideas. so for today’s post i’m going to be sharing a few of my favorites that i’ve made recently! also all super easy, vegan, and pretty quick to make.

my first idea is this spiced tofu, sweet potato and avocado bowl. i’ve been loving making my own ‘sauces’ by mixing spices with olive oil and adding it to the pan while cooking. i start off by chopping up the sweet potato and the tofu into cubes and adding those to a pan (let the sweet potato cook for a bit before adding the tofu) on low. to make the ‘sauce’ for this i mixed paprika and chili powder into a little olive and once both the sweet potato and the tofu were cooked through, added it to the pan. i also make some brown rice to be the base for the bowl. to put the bowl together i add the brown rice, sweet potato/tofu and top with some sliced avocado and sprouts. you can also add more greens if you want, i added some lettuce the second time i made this and it was really good!

my second favorite is super simple and it’s just a flatbread pizza. i love the 7-grain flatbread pizza crust by angela’s bakery (i get it at sprouts) and the sprouts brand pizza sauce. i just spread the sauce on to the flatbread and add some cashew cheese. for toppings i do black olives, peppers, mushrooms, arugula and an italian herbs seasoning. making your own pizza’s is so simple but it’s really good and you can change up the toppings for whatever kind of pizza you feel like.

my last favorite meal as of lately is this tofu and chickpea bowl. i start off by making some quinoa for the base. then i add the chickpeas and then a bit later, the tofu, to a pan. i also added some spinach, arugula, and sprouts to the bowl. for this i also made my own sauce, i mixed a bunch of coriander with a little paprika and a bunch of of the simply organic ‘herbes de provence’ seasoning. i add the sauce to the pan and let it cook a little longer before adding the tofu and chickpeas to the quinoa in a bowl.
