heyyy welcome or welcome back to my blog! in today’s post i’m going to be sharing my current favorite recipes in the form of a what i eat in a day! i eat a pretty healthy (in my opinion) balanced vegan diet <33
for breakfast i made my favorite berry protein smoothie and banana bread! for my smoothie i blend almond milk and banana with any frozen fruits i’m feeling and sometimes protein too! i love love love smoothie in the morning especially this berry one i’ve been making lately. also please ignore that i kinda burnt the banana bread a little, usually it’s a little light but hey it tastes fine! then for my banana bread here’s the recipe:
mix and cook at 350 farenheight for 50 min
- 1 1/2 cups flour
- 3 RIPE bananas
- 1/2 cup oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 cup sugar
- 1/2 cup almond milk
for lunch my mom brought me a panera salad!! i loveee panera soo much it’s so good. i got the chile lime chicken salad but i get it with no chicken or feta obviously and then i swap the dressing to a balsamic. i 10/10 recommend this salad it’s so good omg!! it was also so filling cause i got the big one, i didn’t have my usual big afternoon snack, shocking! but i did have a clif bar and an iced almond milk latte but usually i have like a full meal ex spaghetti.
for dinner my mom made one of my favorite dinners which is this bean chili with cornbread! she cooks the whole thing in the crockpot with vegetable stock. in the chili there is black beans, pinto beans, red kidney beans, tomatoes, onion and green pepper. for the cornbread we just buy the regular boxed stuff but instead of adding eggs, we make a flax egg! to make a flax egg just put one tablespoon of ground flaxseed in two tablespoons of water and let it sit for like 10 minutes. this is one of my current favorite dinners and i really recommend it!
