what i eat in a day (vegan)

i’ve done literally so many of these posts but that’s because i just love them! i always get so many great recipes from them and since i’m pretty into cooking lots of yummy vegan food, i love it! i’ve done one, two, three, four, five of these posts so check those out if you’d like to see more 🙂

+ breakfast

for breakfast, i made my favorite fruit, granola and coconut yogurt bowl! i always have these yummy bowls for breakfast and they’re such a great breakfast to really keep you full and they’re super yummy. to make this, add to a bowl:

  • so delicious coconut yogurt
  • dark chocolate granola
  • chia seeds
  • any fruits you’d like!!
  • hemp seeds
  • and any other toppings you’d love

+ lunch

for lunch, when i got out of school i went to whole foods with my mom. i got a vegan pizza with dairy-free cheese and a bunch of yummy veggies! i definitely recommend whole foods pizzas because they have the best crusts and freshest flavor. i also got this cold brew coffee with maca and vanillawhich was seriously so good!

+ snack

i’m such a huge fan of avocado toast! i used the como bread we had just bought at whole foods which is my favorite bread for toast. but yeah so i just toasted some of the bread and spread an avocado on top. i always have a snack like this before volleyball practice!

+ dinner

as for dinner, if you’ve read any of my what i eat or recipe posts, you would know i am in love with stir-frys!! i literally make one at least once a week because they’re so good. literally no joke having one tonight! but yeah so i just cook up:

  • broccoli, carrots, mushrooms, lettuce, cabbage, peas, etc
  • tofu
  • brown rice (i use the trader joe’s microwave ready rice)
  • and i cook it in my fave stir fry sauce
