in today’s post i’m doing a classic what i eat in a day. i’ve been cooking everything at home cause of everything going on in washington with social distancing. so i’m going to be sharing my go to meals that are super easy and vegan!
breakfast– for my breakfast i made my favorite smoothie bowl and iced coffee. for my coffee i just put some ice and almond milk in a glass and brew a kcup of donut shop extra strong on the iced setting. as for the smoothie bowl i blend frozen pineapple, mango and strawberry with a banana and a splash of almond milk. if i feel like adding stuff i’ll slice up fruit for the top but my favorite thing to add is just granola.
lunch– for lunch i made a simple broccoli and tofu stir fry. all i did was cut up the tofu and whatever veggies i feel like using. then i add some oil to a pan and add the veggies. then stir them around on medium until they’re cooked. mix in your favorite sauce and cook rice if you want. i use the microwave trader joe’s rice and the whole thing takes around 15 minutes.
dinner– for dinner i just made pasta with marinara sauce. obviously super easy but never not good. i wish this was more interesting but what can you do. after dinner i had a cup of tea before bed and that was all.
