Here’s what I eat in a day as vegan and during the school day!! Enjoyyy <33
I started off with a relatively quick breakfast that has been my absolute favorite!! I use the Kite Hill greek almond milk yogurt which is my absolute favorite. For toppings I used sliced banana, strawberries, chia seeds and granola. I honestly change up my topping all the time just based on what fruits and granolas I have in my fridge! I also had a cup of coffee with my breakfast while I got ready for school. For creamer I used the Trader Joe’s almond milk PUMPKIN SPICE one!! Yes you heard that right, Trader Joe’s has the perfect not too sweet, vegan, fall pumpkin spice latte creamer.
After breakfast I take my vitamin which is super important cause I’m vegan and may be missing nutrients like b12! I also sometimes take vitamin d to help my bones and muscles from volleyball and to boost my immune system even more. I love how these are chewable, don’t give me stomachaches because they’re like food and are vegan still!
As for morningsnacks, I will either add a granola bar, dark chocolate or a fruit like an orange or apple to eat during/between classes! I snack so much at school so this is essential. My favorite are these Lara Bars and Clif Bars but I didn’t have any so I just put this other one in the picture so it didn’t look empty but those are my favorites!! I’m also literally obsessed with dark chocolate like it’s highly concerning lol…
For lunch, my mom had bought me this quinoa salad from Whole Foods and it was super yummy!! Packing lunches for school can be rough so I usually pre-pack by buying a salad like this, cooking up quinoa, veggies and beans, etc. My favorites for when I forget to do that are basic salads, peanut butter and jelly, more snacky stuff, etc. I’m not the best at lunches so any tips would be greatly appreciated! Now back to what I had for lunch, basically it had quinoa, nuts, coconut, mango, raisins, kale and more stuff I can’t remember, sorry about that.
For a yummy afterschoolsnack, my mom took me to a local açaí bowl place!! They’re the best ever and I’m seriously so obsessed!! This is their dragonfruit one and the colors in it are sooo stunning. I love how this kept me full all through volleyball practice and until dinner (hard to do lol). I’m seriously so obsessed with smoothies bowls if you haven’t noticed (no, you definitely have)! I also had some Kumbucha, I’ve been obsessed with it!! I drank about half this bottom of watermelon Kumbucha and I love it and I’ve noticed it really helping a girl out.
For dinner I cooked my favorite meal ever… stir fry!! I love vegetable and tofu stir fries sooo much!! I fried some kale, peas, carrots, broccoli and of course tofu in olive oil. For sauce I added just some basic yummy stir fry sauce. This is sooo yummy and I recommend it to anyone! I also cooked up some brown rice in the microwave with some pre-cooked bags from Trader Joe’s. These are great because I often forget to start cooking the rice and then my food gets cold but just pop these in the microwave for a few minutes and boom, delicious rice!
