I don’t know about you but it’s just about summer for me and I’m loving it!! But, the hardest time to eat healthy is definitely at school and during the school year. Since a lot of the time there isn’t enough time to spend forever cooking food so here are some easy and quick recipes that have been my go to’s!! I wanted to do this post before summer came and I try out more and more recipes so I could share my current favorites.
For my breakfast I’ve been obsessed with cooking oatmeal. I used to use the microwave stuff but ever since I started making it on the stove with the plain stuff, it’s soo much better. I use the “Snoqualmie Falls Lodge” oatmeal which is literally the most amazing oatmeal ever!! I topped it with some strawberries and chia seeds today but I also love adding banana’s, raspberries or blueberries. I love having a warm and cozy breakfast especially before school since it’s so early! This is a breakfast that will really keep you full all morning long.
The lunch I packed today was some quinoa, corn and beans on one side and a salad on the other side!! I cooked the quinoa and everything in my easy healthy meals (vegan!) and my salad had broccoli, yellow pepper, croutons and cumber on some mixed greens. For dressing I packed the Trader Joe’s “Green Goddess” salad dressing separately for me to add at lunch so it wouldn’t get soggy. I also packed a mini Naked smoothie in my backpack for me to drink throughout the day and a Clif protein bar!! I just ate those during class as a little snack.
When I get home from school the first thing I always do is make a snack. Today me and my mom stopped at Starbucks and I got a strawberry açaí refresher! To go with it I made some toast, I toasted a piece of “Dave’s Killer Bread” with a bunch of different seeds and grains in it. Then I spread on some peanut butter and sliced up banana. I absolutely love toast, so I’ll either make this or avocado toast so much. This is also for sure the best bread for toast, it’s sooo good.
Finally for dinner my mom cooked up tofu and veggies! She cooked mushrooms, peas, carrot, broccoli in a stir-fry sauce from Whole Foods. Along with that she made tofu and I made quinoa. This has been one of my favorite dinners and it was sooo good!! I recently started absolutely loving tofu so I’m finding more recipes to add it to.
